I was surprised when I found out what eels actually looked like in an aquarium at a young age.  It was hard to connect the dots between the snake looking fish in the water and “the fish” I was eating, and I was shocked at myself that I actually liked eating them.  For better or for worse, that experience did not stop me enjoying unagi all these years.  The combination of delicious warm rice and glistering sweet caramel-like unagi sauce (we call it “unagi no tare”) over the perfectly grilled unagi is simply irresistible.
Unagi sushi are pretty popular and available at most sushi restaurants, but the satisfaction from eating just-grilled unagi on top of warm rice is completely different and can not be compared.  Just aroma of the sauce is enough to make my mouth water.  If you are planning to visit Japan, I hope you will find a good unagi restaurant and give it a try.(just cook book.com)

Unagi is the Japanese word for freshwater eels, especially the Japanese eel, Anguilla japonica. Saltwater eels are known as anago in Japanese. Unagi are a common ingredient in Japanese cooking. Unagi is served as part of unadon (sometimes spelled unagidon, especially in menus in Japanese restaurants in Western countries), a donburi dish with sliced eel served on a bed of rice. A kind of sweet biscuit called unagi pie made with powdered unagi also exists. Unagi is high in protein, vitamin A, calcium, cholesterol and saturated fatSpecialist unagi restaurants are common in Japan, and commonly have signs showing the word unagi with hiragana (transliterated u), which is the first letter of the word unagi. Lake Hamana in Hamamatsu city, Shizuoka prefecture is famous throughout Japan as the home of the highest quality unagi; as a result, the lake is surrounded by many small restaurants specializing in various unagi dishes. Unagi is often eaten during the sultry, hot summers in Japan. There is even a special day for eating Unagi, the midsummer day of the Ox.

उनागी दोन
When unagi is served in a bowl like above, it’s called Unadon (鰻丼) but when it’s served in a fancy square lacquer box, it is called Unaju (鰻重) because the tiered laquaured boxes are called jubako (重箱).

उनगिको सुसी
It is this awesome sushi dish that is made from eel. It is not raw like most sushi but cooked, usually grilled drizzled with teriyaki sauce. It is served thin, and has the skin on it, very delicate and delish
It is the very best one to get. So very very yummy

The Japanese eel and other anguillid eels live in freshwater and estuaries where they feed and grow as  yellow eels for a number of years before they begin to mature and become silver eels. The silver eels then migrate out of freshwater into the ocean and start their long journey to their spawning area.
